Looking for something less indulgent to indulge in with all the holiday goodies around? This pudding gives you all the flavors of the season with a balance of protein and healthy fats that would make any nutrition nut or regular dessert lover alike drool.
The wonderful chia seed is the star of this recipe. If you haven't made chia pudding before, it's practically magical. Soak the seeds in liquid and watch a gel/tapioca pudding like substance form. It also takes on other ingredients and flavors well, hence the traditionally decadent flavors you see here!
Chia seeds are loaded with fiber and Omega-3 fatty acids, and the protein powder provides even more satisfaction factor, so there's no reason not to swap this nutrition powerhouse out for those Christmas cookies or chocolates that are tempting you at the office or home. Oh, and take note...there's no added sugar (unless you choose to add some peppermint candy crumbles on top)!
It takes about 10 minutes to mix these ingredients, then you can just sit and be patient while the flavors marinate and your dessert practically makes itself. Enjoy!
Peppermint Mocha Protein Pudding
Makes 4 servings
- 1 cup coffee
- 3/4 cup unsweetened almond milk (or other milk or milk alternative of choice)
- 2 scoops chocolate whey protein powder
- 1 tsp vanilla
- 2drops peppermint essential oil (or 1/2 tsp peppermint extract)
- 1 T cocoa powder
- 1/4 cup cacao nibs
- 1/2 cup chia seeds
- 1 crushed peppermint stick or candy cane
- In a medium bowl, combine all ingredients except peppermint candy. Mix well to ensure there are no clumps of chia seeds.
- Cover bowl and store in refrigerator for 2 hours or overnight.
- Portion out individual servings and top with peppermint candy crumbles if desired!
