German Chocolate Cake Quinoa Chia Protein Pudding With Salted Date Caramel

Whoa...that's a mouthful for a recipe title. Sorry about that. It sounds involved, but I promise this is the easiest, most delicious, dessert-like breakfast I’ve posted yet! Mix the ingredients and devour! Now I have another question for you. Breakfast or dessert? You decide! 

I got a little adventurous with the goodies Chosen Foods sent my way last week and hopefully you guys enjoy one of the first results (more to come soon!). Despite the utterly decadent sounding title, this dish is absolutely packed with nutritious ingredients. Traditional german chocolate cake includes ingredients like coconut, pecans and caramel. Don't worry - those are all still here...they just got a little upgrade!

In the way of protein, this dish includes Chosen Foods quinoa and chia seeds (both double washed and ready to use...woo hoo for fewer prep steps!), plain greek yogurt, AND whey protein. It's also loaded with whole grain carbohydrates, healthy fats (Omega-3s in the chia seeds), antioxidants, and fiber! Basically, this is a balanced anytime quick meal, snack or dessert! 

 

With or without the caramel and toppings, this recipe is WUNDERBAR!!

German Chocolate Cake Quinoa Chia Protein Pudding with Salted Date Caramel

Makes 2 large or 3-4 small servings. Perfect for any meal, snack or dessert! 

Ingredients: 

Quinoa Chia Protein Pudding

  • 1 cup cooked quinoa
  • 2 T chia seeds mixed with 1/4 cup unsweetened vanilla almond milk (let soak at least 5 minutes until gel forms)
  • 1 scoop chocolate whey protein powder (Thorne Research is my go-to brand!)
  • 1 tsp vanilla extract
  • 2 T cacao powder
  • 1/2 cup plain Greek yogurt
  • 1/4 cup pecan pieces
  • 1/4 cup shredded, unsweetened coconut
  • 2 Tbsp cacao nibs
  • 1/3 cup additional unsweetened vanilla almond milk

Salted Date Caramel: 

  • 6 fresh, pitted medjool dates
  • 1/4 cup water
  • 1/2 tsp vanilla extract
  • 1/2 tsp sea salt

Directions:

For the pudding: After chia gel has formed, mix all ingredients together thoroughly in a bowl and enjoy! 

For the caramel: Place all ingredients in a blender, food processor or using a hand mixer, blend until thoroughly combined and smooth. Should be thick, spreadable and sticky in texture
